Unicenta Openbravo Data RESET difficulties

Dear All,
I am having a bit of a headache.....
I cannot find a way to reset my receipts, totals and quantities on Unicenta OPOS.

I have been inputting data such as stock and retail prices, I have altered the receipt to be relative to the business - but I am completely lost when it comes to resetting the data for tickets and cash counts....

Can anyone tell me where to start here please? Do I look in resources or maintenanace?
